Bolognese Sauce



1⁄2 lbs. Ground Beef
1⁄2 lbs. Ground Pork
1⁄2 lbs. Ground Veal

1 cup White Onion, chopped
1 cup Carrot, chopped
1 cup Celery, chopped
3 cloves Fresh Garlic
1⁄2 cup Zucchini, chopped

2 Tbsp Olive Oil
1⁄2 cup Red Wine
14 oz can Whole San Marzano


1 bunch Fresh Oregano, chopped
1 Tbsp Fresh Basil, chopped
1 tsp Chili Flacks
1 Tbsp Salt
1 Tbsp Black Pepper

1. Heat a large sauce pot over medium-high heat. Lightly brown the meats together. Stir often to break up the chunks and to keep from sticking. Lower the heat to simmer for 20 minutes.


2. While the meat is cooking, combine chopped vegetables in a food processor and pulse until coarse, with no large chunks. Add the vegetable mixture to the meat and continue to simmer until tender, or about 20 more minutes. Stir occasionally to keep from sticking.

3. Deglaze the pan with the wine, then add the tomatoes and the seasonings. Simmer for about 1 hour, until meats are tender

4. Use a potato masher to break up the tomatoes and any remaining chunks in the sauce. Taste the sauce for seasonings and adjust the salt if necessary.
